I know it might be a real pain but have you considered turning the fridge / freezer off for a 24 hour period to see if it is the culprit in terms of excessive power use? With so few demands on the batteries, the loss over 24 hours should hardly register. If the loss is significant without the fridge connected you may have further investigation ahead of you.

If it is the fridge / freezer, try running it as a fridge only (no freezer) and see how that goes over a 24 hour period. Freezers typically place great demands on your valuable power source.

Ambient temperature will be another variable you can't control. We can go for ages in Tassie without seeking out a 240v connection. It's quite a different story in the tropics.

We only use the sink tap water for filling the kettle for a cup of tea or coffee so water is always boiled before drinking.

We have a Mk5 with the plumbing that supports drawing water from an alternate source. We travel with a Jerry can of water (not necessarily potable) stored near the alternate source inlet found below the hand pump fitting. A short length of hose with an inline filter draws water from the Jerry can for showering. The Jerry can is filled with whatever is available including river and bore water. This allows us to preserve our precious drinking water and avoids placing undue strain on the water pump. Once showered it is recommended to run the sink tap to clear the poorer quality water from the plumbing before drinking. No water from the alternate source ends up in the water tank.

Also getting the longer drawbar would obviously put more weight on the axle. Do you need to get the axle upgrade if you get a drawbar extension?
Would appreciate hearing from anyone who has gone through a similar exercise.

Early model Tvans came with a shorter draw bar that from recollection was extended in length to accomodate the draw bar mounted storage box that is commonplace across most of the models these days. There is an extension option for those earlier models but I haven't heard of a draw bar extension for recent Tvan models.

If you are considering buying a Scout, why not shift the fridge from your vehicle to the front storage box on the Tvan making it more accessible when cooking up a storm around the kitchen? You could then pack items you need less frequently in the space remaining in the Prado.

The Prado / Tvan is a great go anywhere touring combination and popular with forum members. Can't say I've heard of anyone doing axle upgrades because they were towing a Tvan but others might have something to add on this matter.

Bit confused about your comment regarding the wheel set up being too model specific. The standard set up will also be vehicle specific - I think the default is 6 stud 16" diameter rims - not sure of the offsets. Doesn't suit my Prado so have asked for matching rims and BFG K02s. Means we have two spares across the six on the ground across the Prado and Tvan.
